Flavor & Texture Add-ins

  • Cocoa powder — 15 g
  • Diced dried banana — 100 g
  • Chocolate chips — 30 g
Instructions
  1. Prepare Dry Mix
Sift together cake flour, U-88 baking powder, and baking soda. Set aside.
  2. Beat Fat Ingredients
In a mixing bowl, beat softened butter. Add EC-25K, cream cheese, sugar, and salt and mix on low speed until just combined.
  3. Add Remaining Ingredients
Add the sifted dry ingredients, along with eggs, milk, mashed banana, and banana flavor, mixing just until everything is incorporated.
  4. Whip and Develop Structure
Switch to medium speed and mix for 2 minutes.
  5. Remove Air Bubbles
Return to low speed and mix for 1 minute to eliminate excess air.
  6. Separate for Cocoa Swirl
Divide ⅓ of the batter and mix with cocoa powder, diced dried banana, and chocolate chips.
  7. Create Marble Pattern
Alternate spoonfuls of the plain batter and cocoa batter into a 7 × 11 × 1¼-inch pan.
Use a skewer or chopstick to swirl the batters and create a marbled pattern.
  8. Bake
Bake at 350°F (180°C) for about 45 minutes, or until cooked through.
  9. Cool & Decorate
Allow the cake to cool completely before slicing or decorating as desired.

✨ Enjoy the perfect balance of banana sweetness and deep cocoa richness in every bite — soft, moist, and bakery-quality.
